Ingredients
No Knead Coffee Cake Batter
- 1 Tablespoon Dry, Active Yeast
- 1 Cup Warm Water
- 1/2 Cup Sugar
- 1/2 Cup Butter, softened
- 1 teaspoon Vanilla Extract
- 2 Eggs
- 3 Cups Unbleached, All-Purpose Flour
- 1 teaspoon Salt
Cereal Streusel Topping
- 1 Cup Crushed Rice Crispy Cereal (about 2 1/4 Cups whole)
- 1/2 Cup Sugar
- 1 teaspoon Ground Cinnamon
- 6 Tablespoons Butter, melted
Instructions
- In a small bowl, combine warm water and yeast. Let sit aside until foamy, about 5-10 minutes.
- In a large mixing bowl, beat together the butter and sugar until light and creamy. Add the eggs and vanilla extract. Stir until combined.
- Fold in the flour and salt until combined.
- Pour in the yeast mixture and stir until completely mixed.
- Cover the bowl with a clean tea towel and let rise in a warm place for 45 minutes.
- Meanwhile make the topping.
Make the topping
- In a medium bowl, combine the crushed cereal, sugar, and cinnamon, Just mix until combined.
- Pour in the melted butter and stir until everything is moistened and crumbly.
Finish the Coffee Cake
- Grease a 9X13 inch baking pan.
- Spread the batter into the prepared pan evenly.
- Sprinkle the topping over the batter evenly, and then using fingertips, push the topping down into the batter.
- Cover the pan with a clean towel and let rise for 30 minutes.
- Meanwhile preheat the oven to 375 degrees Fahrenheit.
- Bake the coffee cake in the preheated oven for 25-30 minutes or until an inserter tester comes out clean.
- Cool pan on a wire rack.
