Hamburger and Rice Hot Dish

Make a simple one skillet meal in less than hour with these easy hamburger and rice hot dish recipe.

Using just a bit of ground meat, some rice, and mostly frozen vegetables this simple meal cooks on the stove in one pot and is a filling casserole sure to please the whole family.

This is frugal and comforting dish perfect for busy days and the leftovers are good, too!

Simple Ingredients

The great thing about this meal is that it’s full of basic pantry and freezer ingredients that come together in a delicous way. There are no special or exotic ingredients required.

Ground Beef

Regular ground beef works perfectly but you could substitute any ground meat you prefer – chicken, turkey, even pork.

Keep it vegetarian by using some of the frozen meatless crumbles instead.

Rice

Use whatever long cooking rice you have on hand – white or brown. I haven’t tested the recipe with instant rice.

Fresh Vegetables

A bit of celery and an onion go a long way in addng extra flavor to this dish, however, it isn’t required. Skip both if you don’t have them on hand, it’ll be different but still good.

Frozen Veggies

I used a bagged mix of frozen corn, peas, green beans and carrots. You could use whatever you have on hand, just make it equal 3 cups of frozen vegetables in the final recipe as you cook.

Water or Broth

I’ve used both water and beef broth in this recipe with amazing results. The beef broth adds a bit more flavor but isn’t necessary if you don’t have any on hand.

Seasoning

Be sure to add salt and pepper. Use other fresh or dried herbs as you prefer. Some oregano or sage is quite nice but not strigctly required.

Other Optional Additions

There are endless ways to customize this casserole and bulk it up. Consider adding:

  • 2-3 cloves of chopped garlic
  • a chopped green pepper
  • 1-2 cups of sliced mushrooms
  • a small diced zucchini or other summer squash
  • sprinkle with a bit of cheese just before serving

How to Serve

This is essentially a meal in and of itself. If you want to make it go a bit further serve it with a simple green salad.

How to Store

Keep leftovers in an airtight container where they will last for up to 2 days. Simply reheat gently on the stove or in the microwave.

Hamburger & Rice Skillet Meal

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

An easy stovetop casserole full of beef, vegetables and rice is a frugal, hearty meal made in a single pan.

Ingredients

  • 1 Pound Ground Beef
  • 1 Medium Onion, chopped
  • 2 Celery Ribs, sliced
  • 3 1/2 Cups Water
  • 3 Cups Frozen Mixed Vegetables (corn, peas, green beans, & carrots)
  • 1 1/2 Cups Uncooked Rice
  • Salt & Pepper to Taste

Instructions

  1. In a large skillet with a lid, brown the ground beef with the onion and celery. Drain, if necessary, to remove excess grease.
  2. Add the remaining ingredients to the pan and bring to a boil over medium low heat.
  3. Cover the pan and simmer for 20-25 minutes or until the rice is cooked and tener.
  4. Fluff with a fork and serve hot.
