Chocolate Potato Cookies

Old-fashioned chocolate potato cookies are delightfully rich and delicious while also being quite simple to bake up.

These goregous cookies are soft and sweet with plenty of soft crunch from the nuts and chocolate chips for an amazing, hearty texture. The frosting adds an optional but delightful creamy layer.

Whether you want a simple dessert for the family or something to fill out a dessert buffet or even use at a bake sale, this chocolate potato cookie recipe is sure to be a hit!

Simple Ingredients

Because it is indeed an old-fashioned recipe, there’s nothing too fancy here in terms of ingredients. Simple pantry staples come together for a superb treat. There are a couple of things worth mentiong however.

Mashed Potatoes

You do need 1/3 cup of cooked and mashed potatoes. Not leftover mashed potatoes – you don’t need the extra butter or milk. A baked or boiled potato that has simply been mashed is what you need to make to the cookie dough.

This is a great way to use up a leftover baked potato or maybe one that is starting to get a bit soft. It’s not much but it’s important for the overall texture of the cookie.

Nuts

I used walnuts but imagine you could easily swap that out for any nuts you prefer or have on hand – pecans, almonds, etc. Don’t like nuts? Skip them entirely, maybe add more chocolate chips instead.

Chocolate Chips

I used basic semi-sweet chocolate chips because I almost always have those in my pantry. You can use whatever you like or have on hand. White chocolate chips would provide an interesting color contrast. You could even skip them if you wanted too.

Malted Milk Powder

The frosting recipe includes some malted milk powder. You could skip it, the flavor will obviously be different. I like the malted milk flavor here but don’t stress about it if you don’t want to buy a jar you’ll never finish or use up.

Other Frosting Ideas

You could make a basic chocolate or vanilla glaze instead. A coffee frosting would be nice for the mocha lovers. You could skip the frosting entirely, if desired. The plain cookies are also quite nice.

How to Serve

Nothing fancy here. Serve these cookies as you would any other cookie – some milk or hot beverage of choice and call it good.

Definitely add some to holiday cookie trays, alongside things like dried fruit and nut cookies.

The frosted cookies tend to be big hits at bake sales too.

How to Store

Keep cookies in an airtight container for up to 5 days at room temperature. If it’s especially warm in your area, you might want to store the frosted cookies in the refrigerator.

For longer term storage, simply put into freezer bags and freeze. Use up frozen cookies withint 6 months for best flavor. Let frozen cookies thaw on the counter prior to serving.

Ingredients

Chocolate Potato Cookies

  • 1/2 Cup Salted Butter, softened
  • 3/4 Cup Brown Sugar, packed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 2 ounces Unsweetened Chocolate, melted
  • 1 1/2 Cup Unbleached, All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/3 Cup Cooked & Mashed Potatoes
  • 1/3 Cup Milk
  • 1/2 Cup Walnuts, chopped
  • 3/4 Cup Chocolate Chips

Chocolate Malt Frosting

  • 1 Ounce Unsweetened Chocolate
  • 1 Tablespoon Butter
  • 1 Tablespoon Hot Water
  • 2 Tablespoons Malted Milk Powder
  • 2 Tablespoons Milk
  • 2 Cups Powdered Sugar

Instructions

Make the Cookies

  1. Preheat oven to 400 degrees Fahrenheit. Grease cookie sheets.
  2. In a large mixing bowl, cream together the butter and brown sugar until light.
  3. Add the egg, vanilla extract, and melted chocolate mixing until completely combined.
  4. Stir in the flour and baking soda, mixing well.
  5. Fold in the mashed potatoes and milk, mixing until combined.
  6. Stir in the nuts and chocolate chips, combining everything well.
  7. Drop by Tablespoonsfull onto prepared baking sheet.
  8. Bake in the preheated oven for 10-12 minutes or until the cookies spring back when touched.
  9. Remove from sheets to cool on wire racks. Frost, if desired.

Make the Frosting

  1. In a small saucepan, combine the butter and unsweetened chocolate. Over very low heat melt the two together, stirring frequently.
  2. Stir in the hot water, mixing until combined.
  3. Add the malted milk powder, milk, and powdered sugar until everything is combined.
  4. Spread onto the tops of cooled cookies.
